vegan collard greens!
I am a phase-y food person.
I have no problem eating the exact same dish everyday for months, but once i'm done i'm done.
now that spring has sprung, it's collard greens, vegan style!

they're so simple, way high in calcium and iron and CHEAP.
..and im eating 'em by the trough-full.

2 bunches should feed 2 hungry folks, cheap groceries or farmer's market's will have them for about $.75 a bunch

*heat up a large frying pan with olive oil, chopped garlic and finely chopped onions
*let that cook for 3-5 minutes until onions start to get translucent
*chop up the big leaves into smaller pieces, or just rip them up straight into the pan
*sautee it all together until greens are tender, 5 minutes max
*toss with a dash of liquid smoke and/ or balsamic vinegar
*throw some salt & pepper in there!
*become orgasmic with enjoyment and send me an email about it!
